Around this time of year I start to wonder how anyone ever lived here pre-electricity and pre-heating. It's cold, it's snowy, it's windy, and since some jackasses killed off all the bison, there's nothing to break the wind but the occasional lost F-350.

Warm, Hearty, Spicy, Beefy One Pot Homemade Shirataki Pho

Salutations sports fans! 

C'est moi, EatMonBlog! It's a whole new January and a new phase for eating this blog. What am I talking about? Check out my first (and hopefully last) personal blog post, from January 1st, 2015. 

Despite this new-ish direction, the motivation for this humble blogger remains the same: real food. real ingredients. not too complicated. makes you feel great. And this is a judgement free zone! True story: my sister is currently sitting next to me eating two 8-inch hotdogs covered in cheddar cheese, avocado, sriracha, maple caramelized onions, and sweet chili heat doritos. While I am not participating in this glory - it remains glorious. 

So how exactly am I going to kick off this month-long journey? WITH SUPER EXCELLENT, HOME-MADE, ONE POT/SLOW-COOKER VIETNAMESE COMFORT FOOD! (the crowd goes wild!!!) Pho (at least 'pho' me) is comfort food that ranks up there alongside perogies, risotto, pizza, and all-you-can-eat sushi. And I have never yet made my own. So why not start now?

January House-Cleaning

Oui allo food-fans and dear blog readers,

It's that time again... January 1st has hit and we're all full of good intentions, resolve, and energetic inspiration for the new year. A quick glance at my social media shows that you fall into two camps - those who think resolutions are a bag of hot sweaty bologna and are just going to keep living their life without conforming to your optimistic standards MAN - or - those of you who are full of vigor, bright-eyed wholistic ambition for a year full of exercise themed instagram photos, a recently discovered love of sprouted lentils, and quote-pictures one could expect to find on a Lululemon bag which carries your newly purchased 120$ jogging pants.

If you can't tell where I fall on that spectrum, it's no surprise. Neither can I.
